Since 2010

Our Family Heritage

In 2010, Alexis Ferrer and his brother-in-law Ricardo Portillo embarked on a mission to adapt the traditional Venezuelan cheese-making process to meet modern standards. Their goal was to create authentic Queso Palmita using pasteurized milk while preserving its distinctive taste and texture.

Through countless experiments and dedication to their craft, they successfully developed a method to produce Queso Palmita that maintained its authentic flavor while meeting safety standards. This breakthrough allowed them to share their beloved Venezuelan cheese with a wider audience.

After Ricardo's unfortunate passing, Alexis Ferrer has been carrying forward his brother-in-law's legacy since 2016, continuing to produce and sell their perfected Queso Palmita and Queso Semi Madurado. Each batch is made with the same attention to detail and commitment to quality that defined their original experiments, ensuring that every piece of cheese delivers the authentic taste of Venezuela.

Craftsmanship

Our Process

We begin with fresh, locally-sourced milk from grass-fed cows. The milk is carefully heated and cultured using traditional methods, allowing the natural flavors to develop. Our cheese-makers monitor each batch by hand, ensuring the perfect texture and taste.

The cheeses are then aged for the appropriate time, developing their distinctive flavors and textures. No artificial preservatives or additives are ever used in our process.

The result is authentic Venezuelan cheese with the perfect balance of flavors and textures – a true taste of our heritage that we're proud to share with you.
